Last holiday we took a two week trip to Northern California and I wasn’t able to work on the Christmas recipes in time. I actually posted this fruit cocktail graham float the day before Christmas last year, which was a little late of course.
This fridge cake needs a good few hours to set in the fridge, I doubt you could make it in time for Noche Buena. Ugh, such a shame because it’s so, so, so yummy!
I’m posting the recipe today with brand new photos to give it the spotlight it deserves. With delicious layers of graham crackers, sweetened cream, and fruit shakes, this fiesta float is a wonderful dessert that’s perfect for the holidays.
But while a no-bake graham cracker is traditionally served at Christmas, it’s also the perfect sweet treat for the hot summer months when you don’t have to worry about an oven on. Don’t let the lack of a special holiday stop you from enjoying this scrumptious dessert, it’s a fabulous addition to any meal all year round!
It’s easy to make and with only 4 ingredients, the hardest part of putting it together is waiting for it to harden. All it takes is whipping the cream to double its volume and then layering the ingredients in the baking dish. Easy peasy.
Tips for making a fruit shake Graham Float:
- Use a square baking dish that is deep enough for multiple layers plus at least 1 inch of head space so that the top layer of cream doesn’t stick to the film when covered.
- Be sure to drain the preserved fruit very well so that no excess liquid seeps into the cake.
- I used Nestle all purpose cream but heavy cream will work too. Make sure the cream contains at least 30% milk fat for a firm lather and better tips.
- For maximum volume, refrigerate cream and condensed milk until very cold. You can also chill the bowl and beaters in the freezer for about 20 to 30 minutes.
- If you prefer, you can replace the graham crackers with broas (lady fingers) or digestive crackers.

Fruit Cocktail Graham Float

Ingredients
- 2 cans (15 ounces each) all-purpose cream
- 1 can (14 ounces) condensed milk, very cold
- 18 pieces of graham crackers
- 1 can (30 oz) fruit shake, well drained
Instruction
- In a large bowl, combine the all-purpose cream and condensed milk. Using a hand mixer on low speed, beat the mixture until it begins to thicken. Increase speed to medium and continue to beat for about 8 to 10 minutes or until doubled in size.
- Arrange a single layer of graham crackers in the bottom of an 8 x 8 pan, breaking pieces as needed to fit the sides.
- Spoon 1/3 of the cream mixture over the graham crackers and spread to cover.
- Arrange a fruit cocktail on top of the cream.
- Place another layer of graham crackers on top of the fruit.
- Spread 1/3 of the cream mixture with a spoon. Add another layer of fruit.
- Arrange the last layer of graham crackers over the fruit. Spoon the remaining 1/3 of the cream mixture onto the crackers. Arrange the remaining fruit cocktail on top of the cream.
- Cover tightly with plastic wrap and refrigerate overnight. If desired, freeze for about 1 hour before serving.
Cut into squares to serve.
