What is Almond Jelly

Almond jelly or also known as almond jelly, almond float and almond or Anna’s tofu is a soft jelly dessert popular in southern China and other neighboring countries such as Japan, Hong Kong and Taiwan. It is also a local favorite in Hawaii, where it is called an almond float.

Silk pudding is commonly served at dim sum and yum cha restaurants as a complimentary dessert.

It is traditionally made by boiling and grinding apricot kernels to extract the milk, which is then prepared using a gelling agent such as agar and sugar as a sweetener. However, newer versions use commercial almond-flavored gelatin mixes or milk and almond extract for ease and convenience.

Helpful hints

  • The measurements in this recipe are based on the brand of gelatin I used. Please read package instructions and adjust quantity accordingly.
  • The brand I used was unflavored and already sweetened. If using an unsweetened brand, add about 3/4 cup sugar or to taste. Attention, the fruit cocktail is also packed in syrup and will contribute to the overall sweetness of the dessert.
  • Replace some of the milk with heavy cream for a richer flavor.
  • For a smooth texture, dissolve the gelatin well. Cook and do not bring the milk mixture to a boil as it may curdle or separate.
  • If you want to be vegan, replace the gelatin with agar-agar and use milk alternatives such as almond, oat, rice, coconut or soy milk.
  • The jello mixture can be placed in a large flat pan and cut into servings or into small portions for individual servings.
  • For variety, replace the fruit shake with any canned fruit such as lychees, tangerines, pineapple chunks, apricot halves, and sliced ​​peaches. Chopped fresh fruit such as kiwi, strawberries, ripe mango and orange segments covered in light syrup are also great topping options.
  • For best results, chill the fruit in the fridge while the gelatin sets.
